Do you have a special night reserved every month for taco night?

In my house, taco night is the last Monday of the month.  My husband’s FAVORITE meal is tacos.  He knows at least once a month he is guaranteed his favorite meal.  Whenever I want to surprise him and get an instant smile when he opens the door from work, I’ll throw in another Mexican dish as a surprise to win him over for the night!

I stumbled across the idea for making taco meat in a crock pot awhile back and I did not believe it would actually work or taste decent.  After a few trials and tweaks to make the recipe just right for my family, I finally have what I believe is the TASTIEST taco meat in the world!

  1. Two minute prep and into the crockpot it goes –perfect if you’re working all day or just out and about!
  2. Only 3 ingredients to make the meat!
  3. Juicy, tender, and tasty flavor…my kids AND husband love it!
  4. This recipe makes A LOT (unless you’re in my family where they go back for seconds and thirds!)… you can use the meat in other ways throughout the week or freeze for a great meal later!
  5. No stove top use during hot summer months
  6. Add any toppings you like to personalize for the members of your family
  7. The meat stays perfect temperature until  it’s ready to be served
  8. Use pre packaged taco seasoning to make it fast, or if you make your own taco seasoning, this is a great way to use it up!
  9. Skip the taco shell, make a taco salad instead and it becomes a low carb meal!
  10. Perfect to use for a family meal or party!

Ingredients

  • 2 lbs Lean or Extra Lean Ground Beef
  • 1 cup Salsa…I use mild for this to allow all to enjoy…you can up the spice factor to your preference afterwards with additional toppings and sauces
  • 4 tbsp taco seasoning…I use Ortega because it’s delicious and fast.  You can make your own taco seasoning if you have time!

Instructions

  1. Spray crock pot with nonstick cooking spray
  2. Place ground beef in the crockpot…do not need to break up the meat.  Just take it out of the package and place the meat in the crockpot
  3. Pour the salsa on top of the meat
  4. Sprinkle taco seasoning on top of salsa
  5. No need to mix anything…let the crock pot do the magic!
  6. Cover and cook on low until the meat is cooked (no pink) – 8 to 10 hours
  7. 40 minutes before serving, break up the meat with a large spoon and mix everything together
  8. 20 minutes before serving, mix everything together in the crock pot with a large spoon one final time
  9. Serve hot on taco shells
  10. Add toppings of your choice
  11. Enjoy!  You may or may not have leftovers!

Our favorite toppings include: Salsa, diced tomatoes, shredded lettuce, sour cream, shredded cheese, queso, and hot sauce!

Ingredients

  • For best results, cover and cook on LOW until the meat is cooked (no pink), about 8-10 hours depending on your crock pot
  • 40 minutes before serving, break up the meat with a large spoon and mix everything together
  • 20 minutes before serving, give the meat another stir in the crock pot with a large spoon to ensure everything is well mixed together!
  • Serve the meat hot on taco shells
  • Add toppings of your choice!
  • Enjoy! You may or may not have leftovers!
