My family and I have made strawberry shortcake every year for as long as I remember.  I truly don’t remember a summer that my mom didn’t make strawberry shortcake of some kind.  I really do love it and begin to crave it every June as strawberry season approaches.

The original recipe my sisters and I always made with my mom growing up had a strawberry and granulated sugar mixture.  Originally, that was what I intended to make.   However, when I opened my cupboard to grab the sugar, I realized I was completely out of sugar…I apparently had used it up and forgot to add it to my grocery list…UUGH!

Soooo, what to do…

I was about to settle for having plain diced strawberries (which would have been good too), except for some reason I decided to open the fridge for a little last minute inspiration.  Just as I did…it hit me!!  BAM!  JAM!  Well, it didn’t really hit me, but it sounds good doesn’t it?!!? 

My secret ingredient for Simple Strawberry Shortcake is…STRAWBERRY JAM!

I decided to try the homemade strawberry jam I had made the week before as a substitute in place of the granulated sugar we typically use…WOW!!!  I will NEVER go back.  Sweet, juicy, and absolutely delicious!  I love when mistakes work out!

Just in case you were wondering…I made sure to tell my mom about the new secret ingredient we all need to use now.  She’s on board 🙂 !

Simple Strawberry Shortcake

Ingredients
  

  • 4 Vanilla Dessert Shells
  • 8 Medium Sized Strawberries
  • 2 tbsp Strawberry Jam (homemade if you have it, or store bought jam is great too!)
  • 1 cup Cool Whip (divided between the 4 dessert shells…or more if you’re a cool whip lover like me!)

Instructions
 

  •  Set dessert shells on a platter or individual plates
  • Wash and dice the strawberries
  • Put the diced strawberries in a small mixing bowl
  • Add 2 tbsp of strawberry jam to the diced strawberries
  • Mix the strawberries and jam until combined
  • Spoon the strawberry mixture evenly between all dessert shells
  • Add a dollop (or more!) of cool whip on top of the strawberry mixture
  • Enjoy!
